Carlos Serres Tempranillo uses all the grapes of the Tempranillo variety from agreements that the winery maintains with an exclusive group of winemakers from the surroundings of Haro. The vineyards have an age of between 10-20 years. The winery jointly manages the cultivation of vineyards to ensure maximum fruit quality, with continuous monitoring throughout the growing season. They are obtained from a manual harvest, in mid-October. The grapes are covered in stainless steel tanks after a light destemming and crushing. After a cold maceration, the must ferments at a controlled temperature of no more than 25º C for 10 days to extract all the varietal character and preserve the properties of the grape as much as possible.
